There is nothing a busy mother of a toddler loves more than a quick, easy lunch. However, I’m also health conscious. So I tend to steer clear of a lot of the processed ready-made stuff, which limits my options. Amy’s freezer meals have always been one of my few exceptions to this rule. For starters, they have a good variety of gluten-free choices and all of their food is made with organic, Non-GMO ingredients. And if they weren’t already awesome enough, they recently debuted three more fantastic choices in addition to the plethora of options they already have on the shelves. Each of the new options is unique and tasty in their own way as usual.
I started with the 3 Cheese & Kale Bake, a grown up version of classic mac and cheese. Made with Monterey Jack, cheddar and parmesan cheeses, it’s packed with cheesy goodness. Yet, it also has the nutritious super powers of vitamin rich kale. I loved this meal and even offered a few bites to my toddler who devoured it as well. I figure anything that meets toddler approved standards must be a repeat buy!
Next, I had the Chili Mac. I’m not going to lie, going by looks alone, I wasn’t expecting much. But, I was pleasantly surprised. It was not my favorite of the bunch, but it was still tasty. It combined the classic flavors of mac and cheese with the punch of a spicy chili. For some reason, I’d never thought to try this combo together before, and yet eating it, they do work well together. I might not rush back to buy this one again, but I do think it will find its way back into my cart at some point.
The last new debut I tried was the Harvest Casserole. I have a guilty secret to share. If I am buying one of these freezer ready-made meals, I tend to not be interested if it looks too healthy in the picture. I know, I’m a total hypocrite. I don’t want to buy a ready-made meal because I want to be healthy, and yet if I am copping out and buying it I want to be splurging on something that tastes good and mimics comfort food. I say this because looking at the picture on the Harvest Casserole box I was afraid I was going to miss out on that guilty splurge. It looked super healthy with its roasted sweet potatoes, kale, beans, quinoa, and tofu, but it tasted amazing! I even forgot I was eating tofu! This ended up being my favorite of the bunch actually because it was so packed with protein and nutrients and yet didn’t compromise at all in taste. This will definitely be a repeat buy!
Overall, I’m so glad Amy’s continues to expand its repertoire with healthy, delicious entrees that are easy to squeeze into the craziness of the day. I will continue to be a loyal customer and I look forward to seeing what tasty creation they come up with next!
