Ingredients
For the Sauce:
- 2 tablespoons peanut butter
- 2 teaspoons gluten-free soy sauce or tamari
- 1½ teaspoons sesame oil
- 1 teaspoon water
- 1 teaspoon rice vinegar
For the Burgers:
- 1½ pounds ground chicken meat
- ¼ cup scallions, sliced
- 1 tablespoon Sriracha sauce
- 2 teaspoons grated peeled fresh ginger (or ¼ teaspoon powdered ginger)
- 2 teaspoons gluten-free soy sauce or tamari
- ¼ teaspoon salt
- 4 gluten-free hamburger rolls
Directions
- Preheat grill to 450 to 500 degrees F.
- Combine the five ingredients for sauce into a bowl and whisk until completely mixed. Set aside.
- Place ground chicken, ginger, and salt in a bowl and fold gently to spread seasonings. Add soy sauce, scallions, and sriracha; mix once more.
- Separate meat mixture into 4 patties. Use thumb or a spoon to create an indentation in the middle of each patty.
- Place patties on a hot grill for 4 minutes. Flip; grill for another 4 minutes or until internal temperature reaches 165 degrees.
- Brush 1 tablespoon of sauce mixture onto each cooked patty. Place patty onto roll; garnish with lettuce if desired.
