Avocado Salsa – a Tasty Twist for Salsa

Avocado Salsa – a Tasty Twist for Salsa

I was planning a party and thought it might be fun to try a different kind of avocado salsa. This recipe was an absolute success. Scoop it up with chips, spoon it over chicken or steak, or eat it on its own!

When most people think of avocado as a dip they think guacamole. But avocado is a great option for salsa as well. Avocado salsa plays nice with basically anything that tastes good with guacamole or green salsa.

Selecting ripe avocados for your salsa.

Check for ripeness by gently pressing the outside of the avocado. If there is no give, the avocado is not ripe yet. If there is a little give, the avocado is ripe. If there is a lot of give, the avocado may be too ripe and not good. In this case, taste test first before using.

How to make Avocado Salsa

Ingredients

  • 1-2/3 cups (about 8-1/4 ounces) frozen corn, thawed
  • 2 cans (2-1/4 ounces each) sliced ripe olives, drained
  • 1 medium sweet red pepper, chopped
  • 1 small onion, chopped
  • 5 garlic cloves, minced
  • 1/3 cup olive oil
  • 1/4 cup lemon juice
  • 3 tablespoons cider vinegar
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 4 medium ripe avocados, peeled
  • Tortilla chips

Directions

  1. Combine corn, olives, red pepper and onion. In another bowl, mix the next 7 ingredients. Pour over corn mixture; toss to coat. Refrigerate, covered, overnight.
  2. Just before serving, chop avocados; stir into salsa. Serve with tortilla chips.

How to Store Avocado Salsa.

Avocado tends to oxidize (turn brown when exposed to oxygen). The coloring is harmless, but doesn’t look all that appetizing, so minimizing air exposure is the best way to store avocado salsa. I recommend storing avocado salsa in an airtight container and pressing food wrap (plastic wrap, waxed paper or beeswax wrap) down onto the surface, before covering it with a lid.

How long will Avocado Salsa Last?

Like most avocado dishes, you’ll want to enjoy this sooner than later. The lime juice will help keep your salsa vibrantly green for 2-3 days in the fridge, especially if you follow the storing tips above.
