Ingredients
- ¾ cup sorghum flour
- ¾ cup brown rice flour
- ½ cup potato starch
- ¾ cup almond flour
- 2 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 2 teaspoon ground cinnamon
- 1/8 teaspoon fresh nutmeg
- ¼ cup unsweetened applesauce
- ½ cup canola oil
- ½ cup sugar
- ½ cup brown sugar
- ½ cup vanilla soymilk
- 3 eggs
- ½ cup pecans
- 1 cup apple, diced small
- 4 tablespoon butter, melted
- ½ cup brown sugar
- ¼ cup vanilla soymilk
- ½ teaspoon salt
Directions
- Preheat oven to 350 degrees F and lightly grease loaf pan with cooking spray or oil. Set aside.
- Mix together first nine ingredients (sorghum flour through nutmeg) in a large bowl and whisk together to fully incorporate.
- In the bowl of a standing mixer, add applesauce, canola oil, sugars, soymilk and eggs and mix until creamy.
- Add dry ingredients to wet ingredients in three additions, mixing fully between each addition.
- Fold in pecans and apples and pour batter into loaf pan.
- Bake for 50 to 60 minutes until a toothpick inserted in the center comes out clean.
- While bread is baking, make glaze by melting butter in a small saucepan, adding sugar and cook for 1 minute. Add soymilk and salt to saucepan and boil for 2 minutes until thick. Cool and pour over cooled loaf.
