What are Zoodles?
Zucchini noodles, or zoodles, are, for the uninitiated, literally a raw zucchini cut into the shape of pasta noodles. They provide a low-carb alternative to wheat-based pasta and sneak an extra vegetable into your meal. You don’t need to eat a low-carb diet to enjoy zoodles, but eating zoodles occasionally is a fun way to add extra veggies and avoid wheat-based pasta.
Unlike “real” pasta, though, zucchini noodles don’t get starchy and thus don’t help to thicken sauces or cling sauce to their surface. Plus, zucchini releases liquid after getting hit with salt or heat, so if you try to substitute in zoodles without other changes, your pasta dish will be a watery mess. Since you don’t need to boil pasta, this creamy zucchini pasta recipe only requires one pan for cooking. You will want to pick up some non-dairy milk, such as plain soy milk made with only soybeans and water. It has the most neutral flavor and a nice creamy texture, without weird ingredients or added flavorings. With other non-dairy milks, your results may vary.
How to Make Creamy Skillet Zoodles
Ingredients
- 6 oz. sage sausage
- 6 zucchinis, spiralized
- Olive oil
- 1 cup mushrooms
- 2 Tablespoons garlic, minced
- 1/4 cup sage, chopped
- 1/2 cup soy milk
- 1/4 cup goat cheese
- Salt and pepper
Instructions
- In a skillet, heat the sausage until fully cooked. Add the zucchini, olive oil, garlic, sage and mushrooms. Cook until mushrooms and zucchinis are soft.
- Add the heavy cream and goat cheese. Cook for ten minutes on medium heat. Season to taste with salt and pepper. Enjoy!
