How to make Cucumber and Tomato Salad

Ingredients

  • 1 large cucumber
  • 3/4 pound tomatoes
  • 1/2 red onion
  • 1/4 cup balsamic vinaigrette dressing
  • salt & pepper to taste

Instructions

  1. Remove skin and half the cucumber lengthwise. Cut each half into roughly 1/2 inch slices.
  2. Dice tomatoes.
  3. Cut red onion into slices then each slice into quarters.  Separate into pieces.
  4. In a bowl, combine cucumbers, tomatoes, and onions.
  5. Add balsamic vinaigrette dressing.
  6. Add salt and pepper to taste.
  7. Toss well to combine.
  8. Serve immediately or refrigerate and serve within 24 hours.

Make your own balsamic vinaigrette dressing

This easy balsamic vinaigrette is bold, sweet, and tangy. Use it as a salad dressing, or drizzle it over roasted veggies and more! There are so many ways to enjoy this dressing that you’ll always want to keep a jar or two handy for whenever the craving strikes.

Ingredients:

  • 2 tablespoons honey
  • 1 tablespoon dijon mustard
  • 1/2 teaspoon fine sea salt
  • 1/2 teaspoon freshly crushed black pepper finely ground
  • 1 large garlic clove minced
  • 1/4 cup balsamic vinegar
  • 3/4 cup extra virgin olive oil

Directions:

  1. In a small mixing bowl, whisk together the honey, balsamic, mustard, salt, pepper, and garlic.
  2. Add the oil and whisk thoroughly to combine. Continue whisking until the dressing is fully emulsified.
  3. Store in a jar with a lid and refrigerate.
  4. Shake well before serving.

Notes

Mix in a blender?

If you choose to make this in the blender, this will be a thicker dressing. Still delicious, simply thicker. I prefer the consistency of this particular dressing when whisked by hand.

Storing Balsamic Vinaigrette 

Because vinegar-based salad dressings like this one have such a high acidity content, they keep for a good long while if stored correctly. After preparing the dressing, pour it into a mason jar and secure the lid tightly.
