- 1 bag edamame
- ½ tablespoon of salt
- ½ cup frozen corn, thawed
- ½ cucumber, diced
- 1 tomato, diced
- 4 tablespoons red wine vinaigrette
- 2/3 cup shaved Parmesan
- Bring a medium pot of water to a boil and add edamame and salt. Cook for 4 minutes, then drain and let cool.
- In a salad bowl, mix together edamame, corn, cucumber and tomato, and toss together. Add red wine vinaigrette and toss until coated. Top with shaved Parmesan. Refrigerate until ready to serve.
