Warm and creamy avocados baked with eggs in them and topped with crispy bacon make for an irresistible breakfast! Both avocados and bacon are two of my favorite foods and eggs are not far behind so combining them together in one simple dish can only be loads of goodness! The basic idea is to cut an avocado in half, scoop out enough to fit an egg, fill it with the egg and then bake it until the egg is set the way you like.
You can add almost anything to these Avocado Baked Eggs! The easiest method is to place the wet add-ins (like roasted peppers) in the avocado prior to adding the egg. Cheese, crumbed bacon or green onions on top. That can also give you a moment to decide if the well is overfull.

- Sautéed Spinach
Another great option for these eggs is to swap out the bacon with diced ham. The combination of ham, eggs and avocado are great!
