How to make Fresh Fiesta Corn Salsa

Ingredients:

  • 4 ears sweet corn, kernels removed
  • 2 ripe tomatoes, diced
  • 1 bell pepper, diced
  • 1 small red onion, finely chopped
  • 1 jalapeño pepper, seeded and minced (optional)
  • ¼ c. fresh cilantro, chopped
  • 1 lime, juiced
  • 2 tbsp olive oil
  • Salt and pepper to taste

Directions

  1. Bring a large pot of water to a boil and cook corn for 3-5 minutes until tender. Allow to cool, then carefully cut kernels from the cob.
  2. In a large bowl, combine corn kernels, tomatoes, bell pepper, red onion, jalapeño and cilantro.
  3. Drizzle with lime juice and olive oil, then gently toss until combined.
  4. Season with salt and pepper to taste.
  5. Refrigerate for 30 minutes before serving to allow the flavors to blend.

Note: Fresh-picked corn is sweetest right after harvest, so bring your ears from the garden straight to the kitchen for the best flavor.
