These pulled pork tostada are a great meal that can be made in advance or be prepped for that next picnic.
Ingredients:
For Avocado Sauce
- 1 avocado
- 4 tablespoons fresh cilantro chopped
- 2 teaspoons minced garlic
- ½ teaspoon salt
- ¼ teaspoon pepper
- 2 tablespoons olive oil
- 2 teaspoons white wine vinegar
- ½ teaspoon lime juice
- ¼ teaspoon onion powder
- ¼ teaspoon garlic powder
For the Tostada
- 2 (16 ounce) packages of prepared pulled pork (we used
- Tony Roma’s Sweet Hickory Pulled Pork)
- 10 crispy corn tortillas
- 1½ cups shredded mozzarella or Monterey jack cheese
- 1½ cups diced tomato
- 2 cups shredded lettuce
- 1 avocado (peeled and sliced)
- One lime
- Sour cream
Directions:
- To make the avocado sauce, combine all ingredients in food processor or chopper and pulse until a smooth sauce forms.
- Heat pulled pork according to package instructions and shred using two forks.
- For a picnic, pack up all ingredients in sealed containers. To assemble the tostadas, spread avocado sauce over the surface of each corn tostada. Top with pork, cheese, tomatoes, avocado slices and lettuce
- Drizzle with sour cream and serve lime wedges as desired
