Pulled Pork Tostada with Avocado Sauce

These pulled pork tostada are a great meal that can be made in advance or be prepped for that next picnic.

Ingredients:

For Avocado Sauce

  • 1 avocado
  • 4 tablespoons fresh cilantro chopped
  • 2 teaspoons minced garlic
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 2 tablespoons olive oil
  • 2 teaspoons white wine vinegar
  • ½ teaspoon lime juice
  • ¼ teaspoon onion powder
  • ¼ teaspoon garlic powder

For the Tostada

  • 2 (16 ounce) packages of prepared pulled pork (we used
  • Tony Roma’s Sweet Hickory Pulled Pork)
  • 10 crispy corn tortillas
  • 1½ cups shredded mozzarella or Monterey jack cheese
  • 1½ cups diced tomato
  • 2 cups shredded lettuce
  • 1 avocado (peeled and sliced)
  • One lime
  • Sour cream

Directions:

  1. To make the avocado sauce, combine all ingredients in food processor or chopper and pulse until a smooth sauce forms.
  2. Heat pulled pork according to package instructions and shred using two forks.
  3. For a picnic, pack up all ingredients in sealed containers. To assemble the tostadas, spread avocado sauce over the surface of each corn tostada. Top with pork, cheese, tomatoes, avocado slices and lettuce
  4. Drizzle with sour cream and serve lime wedges as desired
