Ingredients
- 1 tablespoon olive oil
- 3 slices turkey bacon, diced
- ½ cup diced onion
- 1 firm apple, skins on, chopped (Braeburn or Gala apple)
- 1 teaspoon minced garlic – add last 30 seconds
- 1 pound red cabbage, outer leaves removed
- 1 tablespoon olive oil
- ½ teaspoon salt
- ¼ teaspoon pepper
- Salt and pepper
- ¼ cup water
- 2 tablespoons apple cider vinegar
- 1 tablespoon unsalted butter
- 1 tablespoon lemon juice
- 1 teaspoon brown sugar
- 4 tablespoons blue cheese
Directions
- Heat olive oil in a large sauté pan over medium-low heat. Add in the diced bacon and onion and cook for about 7 minutes until the onions are soft. ,
- Add in the apple and garlic to the pan, stir to combine and cook for 1 minute. Remove everything from pan and set aside.
- Cut the cabbage into 4 wedges and rub olive oil onto the cut surface of cabbage. Sprinkle the salt and pepper onto cut surfaces of cabbage.
- Turn heat up to medium and add cabbage to pan cut surface down. Sear 1 minute per side.
- Add water to the pan, cover with lid and cook 2 minutes. Remove cabbage from pan and place on a serving plate.
- Turn heat off and pour in the apple cider vinegar and use a wooden spoon to deglaze the pan. Add butter, lemon juice and brown sugar to pan and cook for 3 to 4 minutes, then stir in bacon mixture to reheat.
- Pour mixture over cabbage wedges and sprinkle with blue cheese before serving.
