Seared Red Cabbage Wedges

Ingredients
  • 1 tablespoon olive oil
  • 3 slices turkey bacon, diced
  • ½ cup diced onion
  • 1 firm apple, skins on, chopped (Braeburn or Gala apple)
  • 1 teaspoon minced garlic – add last 30 seconds
  • 1 pound red cabbage, outer leaves removed
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • Salt and pepper
  • ¼ cup water
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon unsalted butter
  • 1 tablespoon lemon juice
  • 1 teaspoon brown sugar
  • 4 tablespoons blue cheese
Directions
  1. Heat olive oil in a large sauté pan over medium-low heat. Add in the diced bacon and onion and cook for about 7 minutes until the onions are soft. ,
  2. Add in the apple and garlic to the pan, stir to combine and cook for 1 minute. Remove everything from pan and set aside.
  3. Cut the cabbage into 4 wedges and rub olive oil onto the cut surface of cabbage. Sprinkle the salt and pepper onto cut surfaces of cabbage.
  4. Turn heat up to medium and add cabbage to pan cut surface down. Sear 1 minute per side.
  5. Add water to the pan, cover with lid and cook 2 minutes. Remove cabbage from pan and place on a serving plate.
  6. Turn heat off and pour in the apple cider vinegar and use a wooden spoon to deglaze the pan. Add butter, lemon juice and brown sugar to pan and cook for 3 to 4 minutes, then stir in bacon mixture to reheat.
  7. Pour mixture over cabbage wedges and sprinkle with blue cheese before serving.
